Before upgrading you'll want to:
sudo rm -rf /opt/sublime
Next...
tar xf Sublime\ Text\ 2.0.1\ x64.tar.bz2 sudo mv Sublime\ Text\ 2 /opt/sublime
For an install you'll also need:
sudo ln -s /opt/sublime/sublime_text /usr/bin/subl sudo subl /usr/share/applications/sublime.desktop
into which you'll paste:
[Desktop Entry] Version=1.0 Name=Sublime Text GenericName=Text Editor Exec=subl Terminal=false Icon=/opt/sublime/Icon/48x48/sublime_text.png Type=Application Categories=TextEditor;IDE;Development X-Ayatana-Desktop-Shortcuts=NewWindow
Optionally you can make Sublime your defulat editor by opening /usr/share/applications/defaults.list
and
replacing all instances of gedit.desktop
with sublime.desktop
